Cacao is not only a superfood, it tastes so good too. This is one of those recipes that you can also alter and play with (personalise) and create seasonal bites of joy – from adding spices like cinnamon, cardamon to pumpkin spice or you could even try adding a few drops of peppermint or spearmint essential food grade oils. The possibilities are endless.
Enjoy being creative and remember make with Vitamin L
- 1 Cup pecans or walnuts, or a combination of both
- 1/2 Cup Coconut (finely shredded)
- 5 Tbsp Cacao powder
- 1 Tbsp Pure vanilla extract
- 1/2 Cup of coconut oil
- 2 Cups Medjooled dates (pitted)
- 1 Tbsp Almond butter
Hemp Seeds, Coconut, Cacao powder, Match powder, or Crushed nuts – so many healthy choices to choose from. You could even try adding a few drops of peppermint or
spearmint essential food grade oils.
Mix all of the ingredients in a Thermomix or food blender, except the toppings until well combined. Then take a spoonful of the mix and roll into bite sized balls, roll in your favourite coating before placing on parchment paper in an air tight container and place in the fridge.
They will last a week in the fridge – or maybe not – they simply taste too good and wont be around that long!
