Raw Lemon Cheesecake

Summer favourite for sharing – these delicious sweet and zingy bars are such a delight for the senses and are super quick and easy to make. I use a Thermomix to blend however, any blender will do.

Makes approx 8 squares

Ingredients Base:

  • 1/2 Cup of soaked organic almonds or pecans
  • 1/4 Cup of shredded coconut
  • 5 Organic medjooled dates
  • 1 Tsp Vanilla
  • Pinch Himalayan salt

Blend together then press into a lined square tray and place in the freezer.

Ingredients Top Layer:

  • 3/4 Cup soaked organic cashews
  • 1/4 Cup organic lemon juice
  • Zest of a organic lemon
  • 2 Tbsp organic maple syrup
  • 2 Tbsp organic coconut oil or butter
  • 1 Tsp Vanilla
  • Pinch Himalayan salt
  • Optional Turmeric

Blend together until smooth and creamy – then pour over base layer and freeze for 2hrs.

I love how versatile this recipe is and how you can play with it using different ingredients to create a different flavour………….try some ginger in the base or other alternatives. Orange, mango or cacao in the top layer and add a splash of plant based milk in these to replace the lemon and make the top layer even more creamy. Toppings of grated chocolate, raspberries, thyme, lemon zest, grated pecans – so many options.
